5 Ways to Turn Breakfast into Dessert

It’s a universal truth that a breakfast loaf cake is always a good thing to have on hand. It’s the kind of cake that feels like a treat, but not too much of a treat — special, but every day. A good breakfast cake knows no time of day when it’s not welcome, and that includes after dinner: It can be effortlessly turned into an elegant dinner party dessert. See? Here are 5 ways to transform your breakfast into dessert:

1. Dress It Up
Try serving each slice with a scoop of Olive Oil Gelato or Malted Vanilla Ice Cream. Because everybody loves cake and ice cream. Bonus points if you warm the loaf in the oven for a few minutes first.

2. Dollop Something Special on Top
We like White Chocolate Whipped Cream or whipped cream infused with a tablespoon of orange zest, Grand Marnier, or warm spices like cinnamon or nutmeg.

3. Make a Trifle
Layer cubes of the cake with whipped cream or pastry cream and fruit purée and refrigerate for at least 4 hours. For an extra treat, brush the cake with rum or bourbon. You’ll have a show-stopping dessert — and you won’t have to tell anyone how easy it was to make.

4. Use Stewed Fruit or Compote
Heat fresh fruit and a little sugar or honey in a small saucepan; bring it to a boil, then turn down to a simmer and cook until the fruit has broken down and becomes thick and a little jammy. Top each slice of cake with the warm fruit for a comforting, extra-sweet dessert.

5. Make a Bread Pudding
While you’ll technically be baking again, it’s really only assembly. The result will be gooey, rich, and loved by all of your dinner guests.

Cranberry Ricotta Loaf Cake

Servings: 8



1 3/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon cinnamon

3 gratings fresh nutmeg (about 1/8 teaspoon)

1/4 teaspoon sea salt

1/4 cup milk

1/2 teaspoon almond extract

1/2 teaspoon vanilla extract

1/2 pound ricotta cheese 

1/2 cup butter at room temperature

1 cup sugar

2 eggs

1 cup cranberries

Powdered sugar for garnish (optional)


Preheat oven to 350° F and grease a 9- by 5-inch loaf pan.

Whisk together dry ingredients and spices and set aside. Stir together milk and extracts.

Cream together cheese, butter, and sugar until smooth. Beat in eggs one at a time.

Whisk in dry ingredients, alternating with the milk mixture. When the last addition is incorporated, slowly fold in cranberries.

Fill loaf pan with the mixture and bake in oven for about 35 minutes, until it is golden and well-risen, and a toothpick inserted in the center comes out clean.

Allow to cool for about an hour before sprinkling the top with sifted powdered sugar.
