680 g. toasted pumpkin seeds

205 g. sugar

60 g. water

10 g. salt

Line a baking sheet with a slipat.

In a small saucepan heat sugar and water over medium heat until sugar dissolves. Bring to a boil. Boil, without stirring until sugar mixture turns deep golden, swirling pan occasionally, about 7 minutes.

Stir in pumpkin seeds and salt; quickly pour onto silpat and spread with a heat-resistant rubber spatula into a thin layer.

Cool until hardened. Break into large pieces.
