Thai Pumpkin Soup

A spiced pumpkin soup.

4 tbsp. red curry paste

1 c. sliced onion

5 c. chicken or vegetable broth

3 c. pumpkin or butternut squash

13 ½ oz. can of coconut milk

2 tbsp. fish sauce

Salt, to taste

Pepper, to taste

Cilantro for garnish

Thai basil for garnish

Pepitas for garnish

Electrolux Masterpiece immersion blender


In a large saucepan over medium heat, cook the onions with curry paste for about one minute or until paste becomes fragrant. Add the broth and the pumpkin and stir.

Cook for about 3 minutes or until soup starts to bubble. Add the coconut milk and cook until hot, about 3 minutes.

Once the pumpkin is soft, blend the soup with the Electrolux Masterpiece Collection immersion blender.

Pour into serving bowls and garnish with cilantro, basil and pepitas.
