Tumeric Pasta



380 g. "00" flour

175 g. egg yolks

85 g. egg whites

15 g. turmeric

10 g. water

28g. extra virgin olive oil


In a food processor blend the flour, eggs, turmeric and water until mixture just begins to form a ball, adding more water drop by drop if the dough is too dry. The dough should be firm but not sticky.

Process the dough for 15 seconds more to knead it. Let the dough stand, covered with an inverted bowl, at room temperature for 1 hour.

Roll out the dough with a pasta machine or rolling pin to desired size and shape. 

Cook in salted water with a drizzle of olive oil to keep the noodles from sticking together. Cook to desired texture.
