Vegetable tartar

Vegetable Tartar

Ingredients

½ iceberg lettuce

4 small carrots

2 celery sticks

1 lemon, juiced

1 slice tomato or avocado

2 cloves garlic, crushed

½ cup olive oil

1 Kalamata olive

Salt, to taste

Pepper, to taste

Electrolux Masterpiece immersion blender

Instructions

Shred the vegetables using a food processor and place in a mixing bowl. Reserve in a refrigerator.

To make the vinaigrette, place in a plastic container the lemon juice and garlic then blend with the Electrolux Masterpiece Collection immersion blender with the turbo speed blend and add the oil slowly. Season with salt and pepper.

To serve add 2 tbsp. of vinaigrette to the salad, adjust the seasoning and place on a plate using a round cutter.

Put a slice of tomato and avocado on the top. Decorate with a sliver of a Kalamata olive and some mixed greens.

Sprinkle some vinaigrette around and serve immediately.
